Blogger and author Lindsay Nixon has recently released her third plant-based cookbook. Loaded with travel photos and creative low-fat recipes, this volume focuses on international cuisine--while still utilizing common and easy-to-find ingredients.
Lindsay answered a few questions about this latest book, her favorite foods, and what's next:
What inspired the recipes featured in this book, and how do you come up with your recipes?
"I'm writing my 4th book now. My contract requires me to write 6 total, so I'll be busy for a while!"

What inspired the recipes featured in this book, and how do you come up with your recipes?
"With
my first book, The Happy Herbivore Cookbook, I set out to recreate
dishes ('comfort foods') that I used to eat -- but in a new healthy and
plant-based way. With my second book, Everyday Happy Herbivore, I went
back to basics. I looked at whatever ingredients I had on hand, then
created a meal (or meals) out of it. With my new book, Happy Herbivore Abroad, I recreated meals I ate or saw on my travels... I made
international cuisine healthy and plant-based -- and with everyday
ingredients."
Do you have a favorite recipes in the latest book?
"Asking a chef to pick their favorite recipe is like asking a parent to pick their favorite child :)"
What's your ultimate comfort food meal?
"mashed potatoes and gravy with a side of corn."
Do you have any advice for those thinking of going plant-based?
"Just
do it. Take it a meal at a time. Don't get caught up with over
thinking. Worry about this meal, right now -- not what you're doing
tomorrow, or next week or next Christmas. Never think in "Can's haves"
-- it's not that you can't have it, it's that you're choosing not to.
Also, focus on all the food you can have, not what you're choosing to
give up. I eat a wider variety of food now on a plant-based diet than I
ever did on an omnivorous one!"
What 5 ingredients do you always have on hand in your kitchen?
"onion powder, garlic powder, ground cumin, cinnamon, potatoes"
What's next for the Happy Herbivore? Do you plan on writing any more cookbooks?

I've recently made it a goal to broaden my(and my family's) palate, because it is rather pitiful. This looks perfect for that! Plus, it looks like a perfect homeschooling cookbook for when we study geography. I remember your review of Everyday Happy Hebivore, and I'm STILL determined to add it to my collection soon! ;)
I'm going to say egg rolls, even though that's a pretty easy dish to make vegan. I just haven't found one I like yet.

I would love to see more Italian food made vegan, specifically raviolis and tortellini! I would love this book, looks great! Love her past books!

I would love to see any dishes with curry that can be made simple. I've tried a few curry dishes that I loved but have never really tried to cook them. It seems like I cook more Mexican than anything. By the way I found your website through Lindsays. I clicked it just to find another vegan Audrey :-) Can wait to try some of your recipes!
